The Old Way
Even though the wine trade is about 8000 years old, it has significantly changed over the past 70 years. Winemakers today are more than ever pressured to develop and market wines that conform to the masses, whether that be for particular blends, alcohol level or taste: much in the same way that mass produced foods are made. Then there's managing the risk of huge volumes by using lab yeast cultures, enzymes, and other cellar treatments.
This is NOT Via Vecchia. This is not the Old Way.
We believe that "a well treated wine is an untreated wine." Our wines receive no added chemicals, no added lab-created yeasts or sugars, no added colorings, enzymes or preservatives, and only minimal added sulfites. For filtration of wine, we rely on sedimentation and the Moon
Our greatest compliment is hearing our customers tell us how they can drink wine again.
Because we're committed to making wines the old way, our customers appreciate us. They tell us that they had not been able to enjoy red wine, either because they had formed allergic reactions to wine or simply because many reds have been just over the top, tasted of oak, or difficult to drink and relax with.
Their appreciation is no small thing. We know they leave standard wines to taste and feel the difference in ours.
